The cheese itself is a black Auricchio provolone wax that has been aged for 24 months in Cremona, Italy. Considered one of the best styles of provolone in the world, Auricchio’s provolone is particularly sharp and is a rare treat for Saint-Pierre. The gigantic package looks more like a torpedo than an Italian delicacy, but once Mazzaro’s cuts the cheese, the contents of the projectile will become the star of your next charcuterie board.

The huge dairy delight was delivered by tractor-trailer last week and brought to the store on a forklift, as Mazzaro documented on his Facebook page. They said they plan to start cutting and selling the beautiful provolone “a week or two before Christmas”.
